2 roma tomatoes, sliced
1 slice yellow or red onion, finely chopped
1 tsp finely snipped fresh parsley
salt and pepper
Arrange sliced tomatoes. Sprinkle the parsley and onion on top, drizzle a tiny bit of olive oil and sprinkle lightly with the vinegar. Salt and pepper to taste and you're done. Viola!
