Vegetarian Omelet

This morning I was inspired to make a fabulous omelet and while I enjoy modesty, I knocked this out of the park.

Veggie Omelet with Queso
serves 2


2 large mushrooms, chopped
1/2 yellow onion, diced
1 Roma tomato, diced
2 cloves garlic
1/3 cup fresh basil and chopped fresh cilantro, chopped
3 scallions, chopped
1oz queso, chopped or crumbled up
5 large eggs
A splash of skim milk
Chili powder (optional)
Cumin (optional)


Throw the first four ingredients into a hot skillet with some olive oil:




While that sautes and cooks down, prep your next three ingredients:




Isn't that just gorgeous? So fresh looking. Makes my mouth water. Wait a tick, let's not forget the queso:




Now let's prep our eggs:



Whisk those puppies up and set aside.




Now, when the veggies in the skillet look like this...





Set them aside, liberally add cooking spray and in goes your egg and milk mix. If you like, add cumin and chili powder. So pretty!





When the top of the omelet is still wet but starting to set, add cheese:




Next, add your tomato onion mix, and then on top of that, the scallions and fresh herbs:




Here's the nerve-wracking part! Fold that bad boy:




Success! Now split it up, plate it up, and add some delicious toasted French bread and butter:



Delicious! If you're extra fond of spice, add some Sriracha or Tapatio and tuck in. Enjoy!
